Concentrated and acetified cooked must from Malvasia, Lambrusco, and Sauvignon grapes. Aged seven times in chestnut, cherry, and mulberry barrels. This product was born when the "Grande Maestro" was tasting his vinegar and discussing a rather special "barrel" with his friends... They decided to try it at a dinner among people with "very refined palates"... Its slightly acidic flavor and distinct consistency from other vinegars won the guests' hearts. We've been offering this vinegar ever since. Given the fantastic balance it achieves between density, acidity, and sugars, we recommend using it as a flavor enhancer by pouring it directly onto dishes once they're already on the table. It pairs excellently with grilled meats and vegetables, all kinds of raw dishes, and is also excellent on Parmigiano-Reggiano cheese.
