This Parmigiano Reggiano aged over 30 months stands out for its soluble, crumbly, and grainy texture, and for its perfect balance of sweetness and savoriness. It is naturally free of lactose and galactose: within just 6–8 hours from production, the natural lactobacilli ferment all the lactose, while the galactose is rapidly metabolized and disappears within 24–48 hours. For this reason, it is also ideal for those who are lactose intolerant. On the palate, it offers a rich and refined aromatic bouquet, with notes of melted butter and fresh fruit, hints of citrus, and touches of dried fruit. Parmigiano Reggiano is a naturally safe and genuine cheese, produced according to strict PDO regulations and using only milk, salt, and rennet. Its long aging, which lasts a minimum of 12 months and often up to 76, combined with natural fermentation and high curd-cooking temperatures, prevents the development of harmful microorganisms and eliminates the need for additives or preservatives.
