Composition and preparation:
It is made with carefully selected pure pork, to which 25-30% of the toughest fatty cuts are added. After coarsely mincing the meat, salt, peppercorns, and nitrate are added. Then, just before stuffing, pepper and garlic, crushed in a mortar and dissolved in dry white wine, are added. It stands out from other products in the same category for its firmness and non-elastic consistency, its homogeneous and lean texture, and its ruby red color. Its flavor is sweet and delicate. Unlike the vast majority of commercial salamis, it is stuffed exclusively in natural casings (and never synthetic ones).
 
Traditionally, it's cut diagonally, creating oval slices approximately twice the length of the salami's diameter. To enjoy it at its best, thickness is very important: traditionally, the slices should be as thick as a peppercorn. It's one of Parma's most popular appetizers, paired with Parma ham.
