Cicciolata is a cooked cured meat produced in the Parma area and made from pork.

Its preparation takes place in two stages. The first involves boiling the pig's head and feet in a large pot and cooking the rinds separately in a copper pot until they fry in their own lard and are completely golden. Once cooked, the rinds are pressed in a press to remove all the excess lard. The resulting product is called "ciccioli."

In the second phase, the cracklings are then combined with the heads, completely cleaned of bones, and mixed together. They are then pressed again, wrapped in a cheesemaker's cloth. After a day's rest, the cracklings are removed from the cloth and can be eaten.
