Honeydew honey, also known as forest honey, is produced by bees from July to September. This honeycomb is made by Metcalfa insects, which feed on the leaf sap to extract its protein content. They leave the sap's sugars on the leaf as a byproduct of their digestion. The bees, finding available sugars, collect them as if they were nectar, and once in the hive, they process them in the same way. Harvested on the hills of Costamezzana, Noceto (PR). This very dense honey does not crystallize and is rich in amino acids.
Notes of caramel, warm, smoky, recommended with aged cheeses or baked goods.
