There are cured meats that tell a story, and then there is the Culaccia® by Salumificio Rossi, the masterpiece born from the intuition and butchery expertise of the Rossi family in Sanguinaro di Fontanellato. Often defined as the "queen of Parma cured meats," Culaccia® is the noblest and most prized cut of a strictly 100% Italian heavy pig leg: the heart of the culatello, processed, however, by preserving its precious natural rind and protecting the exposed part with a delicate coating of lard and flour.

Unlike traditional culatello, it is neither stuffed nor tied in a bladder; the presence of the rind prevents the meat from suffering curing shocks or becoming dry. The unique microclimate of the Bassa – characterized by autumn humidity, winter fogs, and summer Apennine breezes – performs a miracle inside the salumificio's historic cellars: a slow and silent maturation (minimum 12-14 months) that provides incomparable softness and a 100% yield, with no waste.
